Cape Cod Ice Cream: Vanilla

Recipe is for a large ice cream maker (6qt capacity). For smaller ice cream makers, modify recipe accordingly.

Ingredients: Heavy Cream: 3 pints, Half & Half: 1 quart, Whole Milk: 2 cups, Egg yolks: 18, White sugar: 4 ½ cup, Pure vanilla extract: 12 teaspoons, Sea salt crystals and grinder: 4 twists of the grinder or approx 4 pinches

In a large mixing bowl, add 1 cup of sugar to the egg yolks and whisk.

Put the heavy cream, half & half, whole milk and remainder of the sugar into a large stainless steel cooking pot. Heat on low to medium until just before it comes to a boil.

Temper the egg yolks (constantly whisking) with the warm cream and milk. Raise the temperature slowly being careful not to harden the egg yolks.

Add the yolks and cream and whisk continuously.

Add the pure vanilla extract.

Continue to whisk and heat the combined ingredients on the stove on a medium to low heat until the mixture begins to thicken (approximately 13 to 15 minutes).

Remove from the heat and cover the liquid with a cling wrap pressed flat on top of the liquid.

Cool the mixture in the refrigerator for about 6 hours.

To make your ice cream, follow your specific ice cream maker instructions.

Cape Cod Ice Cream: Strawberry

Recipe is for a large ice cream maker (6qt capacity). For smaller ice cream makers, modify recipe accordingly.

Ingredients: 16 Ounces of fresh strawberries (chopped), 1 cup of white sugar (2 ½ cups), 2 cups of heavy cream, 1 cup of half and half, ½ tsp vanilla extract, 1 pinch of sea salt

Mix the chopped strawberries with 1 ½ cup of sugar in a large bowl. Allow to set for about 15 to 20 minutes.

Blend the strawberry / sugar mixture in a blender Return the blended strawberry mixture to the large bowl and add the heavy cream, half and half, vanilla extract, salt and second ½ cup of sugar and mix with a large spoon Pour the strawberry mixture into an ice cream maker.

Run the ice cream maker according to the ice cream maker’s instructions. Ice cream will be initially a soft version and can be enjoyed as is or the soft ice cream can be placed in a container and frozen for at least 6 hours for hard ice cream.
